Where can I go in Thailand that’s quieter with less tourists?

Depends what you mean by quiet. You can go to ruralish places like Pai or Ko Pha Ngan and still be surrounded by tourists, or go to a sizable yet unfashionable city like Ubon and only see a couple of expats. If you want rural + no tourists, get thee to Isaan (north-eastern Thailand). Much quieter and off most people’s itinerary… but with that comes a less developed tourist infrastructure, fewer people that speak English, etc. I spent a month in Khon Kaen last summer (kind of the unofficial capital of the region) on an internship, and didn’t see a single backpacker. Some expats though.

I spent about three weeks in a village on the Mekong River called Chang Saen up by the Golden Triangle. It was extremely quiet, yet right on the Mekong. Enjoyable and very few farang, there is an internet cafe. I stayed in room for 1 dollar per night, this was about four years ago. You can make a border run to Burma very easy, so you can stay a long time. I think maybe they changed the visa to 15 days on this type of run, but would need to check again.
