I’m flying into Bangkok - can I sort out accomodation when I get there?

Depends on when you go, in the high season it might be difficult to find accommodation, but any other time you generally have your pick of places. The cheapest rooms have cold water showers and the very cheapest have shared bathrooms, but it’s not hard to find places with hot water and a private bath. I’d recommend just grabbing a Lonely Planet Thailand, it’ll be chock full of places to stay, things to do, etc. Might be a good idea to make reservations for a nice-ish place in Bangkok to give you some time to decompress when you get here, but it’s quite easy/feasible to travel with no reservations.
